Fuzhou Style Oyster Pie (Vegetarian)


This recipes can make about 8 to 10 pieces of small pie

Ingredients
10gm chinese celery (finely chopped)
50gm Bean sprouts (finely chopped)
50gm Turnip (finely chopped)
50gm Straw Mushrooms (finely chopped)
7gm Red Chilli (finely chopped)
1 egg
30gm peanuts (nasi lemak kind) - wash & drain dry

Batter

15gm tapioca flour
15gm rice flour
30gm plain flour
60ml water

Seasoning:

1/2 tbsp sugar
1/2 tsp salt


Method

1. Prepare the batter: rice flour, tapioca flour, plain flour add together and sieve, Add sugar, salt, water to stir well until the mixture abit watery. Then Add 1 egg to mix with the batter. Leave it aside.

2. Prepare the chopped ingredient, then add to the batter to mix together. Mix it well.

3. Prepare oil in the wok for deep frying. Once oil is hot enuff, put the ladle into the wok, to heat up the ladle.

4. Once the ladle is hot, bring it up, put 2 tbsp of batter onto the ladle, Add peanut on top, use low fire as the oil is hot. Let its form into a small round pie.

5. When you see bubbles on the pie, its show the bottom of the pie is cooked, then can try to remove the pie from the ladle, then let it cook until it gives a solid round shape. Then you can prepare to make another pie with the ladle

6. Then turn over the pie to let it cook for a while, poke 2 hole on the backside of the pie, then it will cook faster.

7. You can put abt 8 pieces in a pan then, once it turn brownish scoop up and drain dry.
