Wrapped Wanton in Chillies oil 红油抄手

Ingredient
20 pieces of wanton (with meat filling)
1 stalk of spring onion
2 pieces of garlic

Seasoning sauce
1 tbsp of sweet noodle sauce (甜面酱)
1 tsp of peppercorn powder
1 tsp of peanut powder
1/2 tsp of sugar
1 tsp of sesame oil
1/2 cup of water
1 tsp of chillies oil

Method
1. Boiling water, put in the wanton, then wait for it to have big bubble, add 1 time cold water to reduce the temperature, then let it boil.

2. Once boiling big bubble, add 2nd time cold water to reduce temperature again, then let it boil.

3. Third time boiling big bubble, add 3rd time cold water, let it boil.

4. Once it boiling big bubble, scoop up and drain thru on a sieve to drain dry and then put on the plate.

5. Cut the spring onion into cube size, minced the garlic.

6. Prepare a bowl, put sweet noodle sauce, sugar, sesame oil, water, mixed well into a bowl - this is the seasoning sauce

7. Heat up the wok, put in the mince garlic to fry until fragrant, add in the seasoning sauce, fry until well, then off fire, add in peppercorn powder, peanut powder and chilli oil, stir well, then scoop up and pour over the plate of drained dry wanton.

8. Ready to serve.

Minced pork with chives

This is a simple dish, easy to eat with rice or porridge.

Minced pork with Chives

Ingredient
250gm minced pork
250gm chives (jiu cai aka koo-cai)
2 tbsp black soya beans (wet)
8 pieces of chilli padi (fresh chillies)

Seasoning sauce
a dash of salt
1/2 tsp chicken seasoning

Method
1. Remove the stem of the chives, retain the long green leaves and wash and cut into cube sizes.

2. Wash and cut the chillies into round shape.

3. Hot wok, put 6 tbsp of oil, add in chillies to fry until fragrant, add in minced pork, fry until the pork is cooked, add in chives, black soya bean, and seasoning sauce, stir fry awhile then dish up.


tips:
1. chives no need to fry so long, to retain its crunchness.
2. wet black soya beans is abit sweet. (can replace with spicy hot bean paste)
